Pastis is known as «le jaune», the yellow one, in most bars. In some establishments, it is served in line. The barman will line up glasses next to each other and empties the bottle into the glasses following this line.
Served as is, its qualities as an aperitif is renowned, but it can be embellished with many syrups. With orgeat it becomes a «mauresque», with mint a «perroquet» (Parrot) and a «tomate» with grenadine.
